Description

Make this classic Polish dessert that is made with layers of golden choux pastry and rich pastry cream, this Karpatka cake also known as Carpathian Mountain Cake is light, creamy, and very nostalgic.


Ingredients

Choux Pastry:

  • 1 cup (240ml) water
  • 100g (7 tbsp) unsalted butter
  • Pinch of salt
  • 1 cup (125g) all-purpose flour
  • 4 large eggs

Pastry Cream Filling (Mousseline):

  • 2 cups (500ml) whole milk
  • 4 egg yolks
  • 1/2 cup (100g) white granulated sugar
  • 1/4 cup (30g) cornstarch
  • 2 tsp vanilla extract
  • 200g (1 cup) unsalted butter, softened

To Finish:

  • Powdered sugar, for dusting

Instructions

  1. Make Choux Pastry: Boil water, butter, and salt. Add flour, cook until dough forms. Let cool, then beat in eggs.
  2. Bake Layers: Divide dough into two pans and bake at 200°C (390°F) for 25–30 minutes. Let cool.
  3. Make Cream: Whisk egg yolks, sugar, and cornstarch. Heat milk and temper into yolks. Cook until thick. Stir in vanilla and cool.
  4. Finish Cream: Beat cooled custard with softened butter until smooth and fluffy.
  5. Assemble Cake: Layer cream between baked choux layers.
  6. Chill & Dust: Refrigerate 2–3 hours. Dust with powdered sugar before serving.

Notes

Springform Pan Tip: For easy removal and clean edges, line the base with parchment paper and lightly grease the sides.

Choux Batter Consistency: Should be thick but pipeable—if it’s too runny, your layers won’t puff.

Butter for Cream: Make sure the butter and custard are both room temperature to avoid curdling.

Serving Suggestion: Best served cold, straight from the fridge for clean slices.
