Description

Kopytka, often referred to as “Polish gnocchi,” are traditional potato dumplings. Make you own Polish Kopytka with this simple and quick recipe! They are soft and chewy, and can be enjoyed with toppings like butter, sour cream, or even a meat sauce.


Ingredients

  • 3 large Potatoes
  • 1 large Egg
  • 1 1/2 cup All-purpose flour
  • Salt (to taste)
  • 2 tablespoons Salted butter

Instructions

  1. Prepare the Potatoes: If starting with whole potatoes, peel them, boil until tender, and then mash. Allow the mashed potatoes to cool completely before using. If using leftover mashed potatoes, ensure they are unsalted and not too buttery.
  2. Make the Dough: In a large mixing bowl, combine the cooled mashed potatoes with the egg and a pinch of salt. Gradually add flour, starting with one cup, and mix until the dough begins to form. Add more flour as needed until the dough is soft but not sticky.
  3. Form the Gnocchi: Turn the dough out onto a floured surface. Divide it into sections and roll each into a long, thin rope about 3/4 inch in diameter. Cut the ropes into 1-inch pieces.
  4. Cook the Gnocchi: Bring a large pot of salted water to a boil. Drop the kopytka pieces into the boiling water and cook them until they float to the surface, about 2-3 minutes.
  5. Fry the Kopytka: This step is optional, but you can fry the gnocchi in 2 tbsp of salted butter, until crispy.
  6. Serve: Remove the kopytka with a slotted spoon and drain well. Serve immediately with your choice of topping, such as melted butter, a sprinkle of salt, or a hearty meat sauce.

Notes

For a richer flavor, you can add a pinch of nutmeg to the dough.

Kopytka can be sautéed in butter or oil after boiling for a crispy exterior.

These gnocchi freeze well. Lay them out on a baking sheet to freeze individually, then transfer to a bag or container for long-term storage.
