There is something very comforting about warm, soft apple pancakes fresh from the pan. Polish racuchy z jabłkami are a traditional treat that many families enjoy for breakfast, dessert, or a sweet snack. They are simple, made with basic ingredients, and filled with tender apple pieces.
This traditional recipe uses yeast, which makes the pancakes extra fluffy and light. The outside becomes golden and slightly crisp, while the inside stays soft and airy. A dusting of powdered sugar finishes them perfectly.
Even though we call them apple pancakes, they are actually closer to thick, fluffy fritters in texture. This is because of the yeast dough, which makes them more airy and rich than regular pancakes.

The apples add natural sweetness and a gentle tart flavor. This makes the pancakes taste fresh and not too sugary.
You can serve racuchy for breakfast, dessert, or even as a snack with tea or coffee. They are very versatile.
Both kids and adults love these soft apple pancakes. They are easy to eat and always a crowd favorite.
What Are Racuchy z Jabłkami?
Racuchy z jabłkami are traditional Polish apple pancakes made with yeast dough. They are pan-fried rather than deep-fried, which gives them a soft inside and lightly crisp outside.
This dish has been popular in Polish homes for many generations. It is often made during apple season but can be enjoyed all year round. The yeast version is considered the classic, old-fashioned way.

Yeast vs. Baking Powder Racuchy
One of the things that makes traditional Racuchy z Jabłkami special is the yeast batter. It takes a little longer because the dough needs time to rise, but the reward is thick, light, and fluffy pancakes with a soft center and a crispy outside.
If you are short on time, you can make a quicker version with baking powder instead of active dry yeast. The pancakes will still taste delicious, but they will be less airy and more like classic apple pancakes. For the most authentic Polish apple pancake recipe, yeast is the traditional choice.

Key Ingredients & Substitutions
All-purpose flour (2 cups / 250g): This is the base of the batter and gives the pancakes their soft, fluffy texture. If you want a slightly chewier bite, you can use bread flour instead.
Warm milk (1 cup / 240ml): Warm milk helps activate the active dry yeast and creates a smooth batter. Make sure the milk is warm, not hot, because hot milk can stop the yeast from working. You can also use your favorite plant-based milk if needed.
Eggs (2 large): Eggs help hold the batter together and make the pancakes rich, soft, and tender. Let the eggs come to room temperature if possible for the best results.
Sugar (2 tablespoons): The sugar feeds the yeast and adds a light sweetness to the batter. Traditional Racuchy z Jabłkami are only lightly sweet because they are finished with powdered sugar after cooking.
Salt (1 teaspoon): A little salt balances the sweetness and brings out the flavor of the other ingredients. Do not skip it, even though the pancakes are sweet.
Active dry yeast (2 teaspoons or 20g fresh yeast): Yeast is the secret to light and fluffy Polish apple pancakes. Fresh yeast is the traditional choice, but active dry yeast works just as well. If you want a quicker version, you can replace the yeast with 2 teaspoons of baking powder, but the pancakes will be less fluffy.
Fresh apples (2 medium, about 300g): Fresh apples add sweet, juicy bites throughout the pancakes. Gala apples, Fuji apples, Honeycrisp, or Granny Smith apples all work well because they keep their shape while cooking.
Oil or butter (for frying): Fry the pancakes in vegetable oil, butter, or a mixture of both. Butter adds rich flavor, while vegetable oil helps prevent the butter from burning.
Powdered sugar (for serving): A generous dusting of powdered sugar is the traditional finishing touch. You can also serve the pancakes with a drizzle of honey or a sprinkle of cinnamon if you like a little extra sweetness.

Best Apples for Racuchy z Jabłkami
Fresh apples give these Polish apple pancakes their wonderful flavor and texture. Firm apples stay slightly crisp while cooking, creating little pockets of sweet fruit inside every pancake.
Gala apples and Fuji apples are both excellent choices because they are naturally sweet and hold their shape well. If you prefer a slightly tangy flavor, Granny Smith apples also work nicely. During apple season, you can use almost any fresh local apples that are firm and juicy.
For extra flavor, some families add a little cinnamon, a splash of vanilla extract, or a few drops of lemon juice to the batter. These additions are optional but pair beautifully with apples.
How to Make Racuchy z Jabłkami
Activate the yeast In a small bowl, mix warm milk with sugar and yeast. Let it sit for about 10 minutes until it becomes foamy. This shows the yeast is active.
Prepare the apples Peel the apples, remove the cores, and cut them into small cubes or thin slices. Set aside so they are ready to use.
Mix the base batter In a large bowl, combine flour and salt. Add eggs and the yeast mixture. Mix until you get a smooth, thick batter.

Add more milk if needed If the batter is too thick, slowly add a little more warm milk. The batter should be thick but still spoonable.
Let the batter rise Cover the bowl with a clean towel and place it in a warm spot. Let it rise for about 1 hour, or until it doubles in size.
Fold in the apples Gently mix the chopped apples into the risen batter. Do not overmix, just fold them in evenly.
Heat the pan Place a frying pan over medium heat. Add butter or oil and let it heat until hot but not smoking.
Scoop the batter Use a spoon to drop portions of batter into the pan. Each pancake should be about the size of a small pancake.

Fry until golden Cook for 2–3 minutes on each side until golden brown. Adjust heat if needed to prevent burning.
Drain and serve Place the pancakes on paper towels to remove excess oil. Sprinkle with powdered sugar and serve warm.
Tips for the Best Polish Apple Pancakes
- Use warm, not hot milk: Milk should be warm to the touch, not hot. Too much heat can kill the yeast and stop the dough from rising.
- Let the batter rise fully: Do not rush this step. A full rise gives the pancakes their soft and fluffy texture.
- Choose the right apples: Firm apples work best because they keep their shape and do not turn mushy during cooking.
- Control the heat carefully: Cook on medium heat. If the pan is too hot, the outside will burn before the inside is cooked.
- Do not overcrowd the pan: Leave space between pancakes so they cook evenly and are easy to flip.
- Serve immediately: Racuchy taste best fresh and warm. They become less fluffy as they cool.
Troubleshooting
The batter didn’t rise. Your milk may have been too hot, or the active dry yeast may no longer be fresh. Always let the yeast become foamy before mixing the batter.
The pancakes are raw inside. Lower the heat slightly and make smaller pancakes. Cooking them over medium heat helps them become golden brown on the outside while staying fluffy inside.
The pancakes absorbed too much oil. The pan was probably not hot enough before frying. Wait until the butter or vegetable oil is properly heated before adding the batter.
The pancakes are too dense. Be careful not to overmix after adding the apples. Folding the apples in gently helps keep the batter light and fluffy.

Freezing: You can freeze racuchy by placing them in a single layer, then transferring to a freezer bag. They keep well for up to 2 months.
Reheating: Reheat in a pan over low heat or in the oven at 300°F (150°C) until warm. Avoid microwaving, as it can make them soggy.

FAQ
Can I make racuchy without yeast?

Why is my batter not rising?
The yeast may be inactive or the milk may have been too hot. Always check that the yeast becomes foamy.
Can I leave the skin on the apples?
Yes, but peeling gives a softer texture and is more traditional.
Can I make the batter ahead of time?
It is best to use it fresh, but you can let it rise in the fridge overnight.
What oil is best for frying?
Neutral oils like sunflower or vegetable oil work well. You can also mix with butter for better flavor.

THESE RECIPES SOUND DELICIOUS ! I MUST TRY SOME OF THEM !
I always made my racuchy with yeast so I was a bit skeptical. I couldn’t believe how easy and fast these pancakes were to make. I was sampling them within 30 minutes and was delighted. They were fast to make, no need to let anything rise, pancakes were light and delicious too.
I didn’t have any vanilla sugar so I substituted 1 Tbsp of granulated sugar and 1 teaspoon of vanilla. I was expecting lumps in the batter but there weren’t any. Instead of apples I used dark red cherries that I sliced thin. Blotted them with several layers of paper towels, happy to report no cherry juice ran in the batter. Will be making apple ones next. Already shared this great recipe.
So happy I found your website. My son is also enjoying your website.
Can these pancakes be baked in a 9×12 pan?
Not quite. 😊 Racuchy are traditionally pan-fried, which is what gives them their characteristic fluffy texture and golden crust. If you’d like to bake them, you can spread the batter into a greased 9×12-inch pan and bake at 350°F (175°C) for about 25–35 minutes, but the result will be more like an apple yeast cake than traditional racuchy.
I’m making the pancakes tonight for our dinner! Your recipes are so delicious!
Thank You so much!
