Description

This traditional Racuchy z Jabłkami recipe makes soft, fluffy Polish apple pancakes filled with tender fresh apples. Fried until golden brown and served warm with powdered sugar, these homemade yeast apple pancakes are a favorite Polish breakfast recipe and comforting dessert.


Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 cup (240ml) warm milk
  • 2 eggs
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tsp active dry yeast (or 20g fresh yeast)
  • 2 medium apples (about 300g)
  • Oil or butter for frying
  • Powdered sugar for serving

Instructions

  1. Activate the yeast Mix warm milk, sugar, and yeast in a bowl. Let it sit for 10 minutes until foamy and active.
  2. Prepare the apples Peel, core, and cut apples into small pieces so they mix evenly into the batter.
  3. Combine dry ingredients In a large bowl, mix flour and salt to evenly distribute the ingredients.
  4. Add wet ingredients Add eggs and the yeast mixture to the flour. Stir until smooth and thick.
  5. Adjust consistency If needed, add a little more milk to reach a thick but spoonable batter.
  6. Let the batter rise Cover and let it rest in a warm place for about 1 hour until doubled in size.
  7. Add apples to batter Gently fold in the apple pieces without deflating the batter too much.
  8. Heat the frying pan Warm oil or butter over medium heat until ready for frying.
  9. Cook the pancakes Drop spoonfuls of batter into the pan and cook each side for 2–3 minutes until golden.
  10. Drain and finish Place on paper towels, then dust with powdered sugar before serving.

Notes

For best results, always check that your yeast is active before mixing the batter. This step is very important for achieving the right texture.

If your kitchen is cold, let the batter rise in a slightly warm oven (turned off). This helps the yeast work properly.

You can adjust the sweetness by adding more or less sugar, depending on your taste. However, traditional racuchy are only lightly sweet.

Try not to flip the pancakes too early. Let them cook fully on one side so they develop a nice golden crust.

During apple season, try using Gala apples or Fuji apples for naturally sweet flavor. If you enjoy warm spices, add a little cinnamon or vanilla extract to the batter before cooking.
