Ingredients

- 500 grams Red beets
- 1 White onion
- 2 tablespoons Olive oil
- 1/2 teaspoon Sea salt
- 1 1/2 teaspoon White sugar
- 1/4 teaspoon Black pepper
- 1 tablespoon Apple cider vinegar
Instructions
- Boil the beets with their skin on until soft, about 40 minutes.
- Rinse the cooked beets under cold water; this will make peeling easier.
- Peel the beets.
- Grate the beets.
- Finely chop the onion and add it to the grated beets along with the rest of the ingredients (salt, pepper, sugar, olive oil, and vinegar). Mix well to combine.
Notes
- For a variation, you can add a touch of horseradish or some diced apples for additional flavor layers.
- This salad can be served immediately or stored in the refrigerator, allowing the flavors to further develop and the salad to chill thoroughly.
