Ingredients

  • 500 grams Red beets
  • 1 White onion
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Sea salt
  • 1 1/2 teaspoon White sugar
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Apple cider vinegar

Instructions

  1. Boil the beets with their skin on until soft, about 40 minutes.
  2. Rinse the cooked beets under cold water; this will make peeling easier.
  3. Peel the beets.
  4. Grate the beets.
  5. Finely chop the onion and add it to the grated beets along with the rest of the ingredients (salt, pepper, sugar, olive oil, and vinegar). Mix well to combine.

Notes

  • For a variation, you can add a touch of horseradish or some diced apples for additional flavor layers.
  • This salad can be served immediately or stored in the refrigerator, allowing the flavors to further develop and the salad to chill thoroughly.
