Polish Cheesecake with Strawberries

What is Sernik z Truskawkami?

Polish Cheesecake with Strawberries is a classic dessert made with a creamy cheese base, typically using twaróg (Polish quark cheese), and topped with fresh strawberries and strawberry jelly.

The base is often made from sponge biscuits or a simple biscuit crust. This cheesecake is easy to prepare and does not require baking, making it an ideal treat for warm days.

Why I Love This Recipe for Polish Cheesecake with Strawberries

This Polish Cheesecake with Strawberries is one of my favorite desserts because it’s light, fruity, and incredibly easy to make. The combination of the creamy cheese filling, the fresh strawberries, and the delicate jelly topping creates a harmonious blend of flavors and textures that everyone loves.

Plus, it’s a beautiful dessert that always impresses guests. It is different from a classic Polish cheesecake, because its a no bake dessert, based on gelatin!

Key Ingredients

Twaróg (Polish quark cheese): The base of the cheesecake, providing a rich and creamy texture. If you can’t find twaróg, you can use cream cheese or ricotta as a substitute.

Strawberries: Fresh strawberries are used both in the filling and as a decorative topping.

Strawberry Jelly: Adds a beautiful, glossy finish to the cheesecake and enhances the strawberry flavor.

Gelatin: Helps set the cheesecake filling.

Sponge Biscuits: Form the base of the cheesecake, providing a light and airy texture.

How to Store?

Store the cheesecake in the refrigerator, covered with plastic wrap or in an airtight container, for up to 3 days. This dessert is best enjoyed chilled.

How to Serve?

Serve Polish Cheesecake with Strawberries chilled, cut into slices. It pairs wonderfully with a cup of coffee or tea, making it an ideal dessert for any occasion. Garnish with extra strawberries or mint leaves for an added touch of elegance.

Expert Tips for the Best No Bake Cheesecake with Strawberry Jello

Using Twaróg: If you can’t find twaróg, use a combination of cream cheese and ricotta for a similar texture and flavor.

Strawberry Preparation: Ensure the strawberries are thoroughly dried before adding them to the cheesecake to prevent excess moisture.

Gelatin Mixing: When adding the gelatin mixture to the cheese mixture, make sure to temper it slowly to avoid lumps.

Variations and Substitutions

Different Fruits: Substitute strawberries with other fruits like raspberries, blueberries, or peaches for a different flavor profile.

Flavored Jelly: Experiment with different flavored jellies that complement the fruit used in the cheesecake.

Biscuit Base: Use digestive biscuits or graham crackers instead of sponge biscuits for a different base texture.

Polish Cheesecake with Strawberries (Sernik z Truskawkami) is a creamy, no-bake dessert featuring a rich cheese base, fresh strawberries, and a strawberry jelly topping. Perfect for summer, this cheesecake is easy to make and refreshingly delicious.

Ingredients

Units Scale
  • 1 kg twaróg (Polish quark cheese), well-drained
  • 200 g crushed graham crackers
  • 3 tbsp melted butter
  • 600 g strawberries, hulled and halved
  • 1 strawberry jelly packet
  • 2 tablespoons gelatin
  • 1/2 cup milk
  • 150 g heavy cream (30% or 36%)
  • 1 packet vanilla sugar
  • 3/4 cup powdered sugar

Instructions

  1. Prepare Jelly: Prepare the strawberry jelly according to the package instructions, reducing the water by 50 ml. Pour into a bowl and set aside to cool.
  2. Prepare Strawberries: Rinse and dry the strawberries, hull, and halve them.
  3. Prepare Base: Line the bottom of a 26 cm springform pan with parchment paper. Mix the crushed crackers with butter, and place on the bottom of the springform. Push down with a spoon, to pack it together.
  4. Dissolve Gelatin: Heat the milk until warm, then dissolve the gelatin in it, stirring continuously.
  5. Mix Cheese Filling: In a large bowl, combine the twaróg, heavy cream, powdered sugar, and vanilla sugar, mixing well.
  6. Incorporate Gelatin: Gradually add the warm gelatin mixture to the cheese mixture, mixing thoroughly to ensure smooth consistency.
  7. Add Strawberries: Gently fold in 2/3 of the halved strawberries into the cheese mixture. Pour the mixture over the biscuit base and smooth the top. Chill in the refrigerator for 30 minutes.
  8. Top with Jelly: Arrange the remaining strawberries on top of the cheesecake, then pour the cooled jelly over the strawberries. Chill until completely set, about 3 hours.

Notes

Ensure the gelatin is completely dissolved in the milk to avoid lumps in the cheesecake.

The jelly should be cool but not set when pouring over the cheesecake to achieve a smooth finish

    • You will find it at the Polish stores in small packets. It’s a typical ingredient used in Polish baking, but You can also substitute it with granulated white sugar mixed with 1/4 tsp vanilla extract.
