What is Blok Czekoladowy?

Blok Czekoladowy is a traditional Polish dessert that resembles a chocolate salami or sausage. It’s made by melting a mixture of butter, sugar, cocoa, and powdered milk, then adding in broken biscuits and puffed rice to create a chunky, chewy texture.

Once shaped into a log and chilled, it’s sliced into rounds, revealing a mosaic of chocolatey goodness with bits of biscuits and nuts. This dessert is incredibly versatile, allowing for various add-ins like nuts, dried fruits, or different types of biscuits.

Why I Love This Recipe

I love this Blok Czekoladowy recipe because it combines rich chocolate flavor with a delightful mix of textures, thanks to the crispy biscuits and puffed rice.

It’s incredibly easy to make, requiring no baking, and it’s perfect for when you need a quick and satisfying dessert.

The best part is its versatility—each batch can be different depending on what add-ins you choose, making it a fun and creative treat to make with kids or friends.

Key Ingredients

Butter: The base of the chocolate mixture, providing a rich, creamy texture. Use unsalted butter for better control over the flavor.

Sugar: Adds sweetness and helps to create a smooth, glossy texture when melted with the butter.

Cocoa Powder: The star of the recipe, providing deep chocolate flavor. Use high-quality cocoa powder for the best results.

Powdered Milk: Gives the dessert its unique taste and texture, reminiscent of Polish confections from the past.

Sweet Butter Biscuits (Herbatniki): Adds a crunchy texture and absorbs some of the chocolate mixture, creating a delightful contrast.

Puffed Rice (Ryż Preparowany): Provides a light, crispy element that pairs perfectly with the dense chocolate mixture.

Pistachio Nuts: Adds a nutty flavor and crunchy texture. You can substitute with walnuts, hazelnuts, or almonds based on preference.

How to Store Polish Chocolate Bar?

Store Blok Czekoladowy in an airtight container in the refrigerator for up to 1 week. For longer storage, wrap it tightly in plastic wrap and aluminum foil and freeze for up to 3 months.

To serve, thaw in the refrigerator overnight and slice just before serving to maintain its firm texture.

How to Serve?

Serve Blok Czekoladowy cold or at room temperature, sliced into thin rounds. It pairs wonderfully with a hot cup of coffee or tea, making it a perfect dessert for gatherings or a sweet treat for any time of day.

For an extra indulgent experience, serve with a dollop of whipped cream or a scoop of vanilla ice cream, and serve alongside other Polish desserts like these Polish Rogaliki with jam!

Expert Tips

Choosing Ingredients: Use high-quality cocoa powder for the best chocolate flavor. Opt for unsalted butter to better control the sweetness and salt levels in the dessert.

Room Temperature Ingredients: Make sure the butter is at room temperature for easier melting and a smoother mixture.

Mixing: When adding the biscuits and puffed rice, gently fold them in to evenly distribute without crushing them too much. This ensures that each slice has a good mix of textures.

Shaping the Log: After mixing, shape the chocolate mixture into a log on a piece of parchment paper. Roll it tightly and twist the ends to secure it, then refrigerate until firm.

Cutting: Use a sharp knife to slice the chilled Blok Czekoladowy into even rounds. If the log is too firm, let it sit at room temperature for a few minutes to soften slightly before cutting.

Variations: Add a handful of dried fruits like raisins or dried cranberries for a fruity twist. You can also add a pinch of sea salt to the mixture for a salted chocolate version.

Variations and Substitutions

Different Nuts: Substitute pistachios with other nuts like walnuts, hazelnuts, or almonds to change the flavor profile and texture.

Dried Fruits: Add chopped dried fruits such as raisins, apricots, or cranberries for an extra burst of flavor.

Gluten-Free: Use gluten-free biscuits to make this dessert suitable for those with gluten sensitivities.

Healthier Version: Substitute half of the butter with coconut oil and use dark chocolate with a high cocoa content to reduce sugar levels.

Vegan Option: Use vegan butter and plant-based powdered milk to make this dessert vegan-friendly.

Description

Blok Czekoladowy, or Polish Chocolate Bar, is a traditional no-bake dessert that combines rich chocolate, crunchy biscuits, and puffed rice. It’s an easy and versatile treat perfect for any occasion.

Ingredients

Units Scale
  • 200g unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup (120ml) milk
  • 1/2 cup cocoa powder
  • 1 cup powdered milk
  • 200g sweet butter biscuits (Herbatniki), broken into pieces
  • 1 cup puffed rice (Ryż Preparowany, Optional)
  • 1/2 cup pistachio nuts, chopped

Instructions

  1. Prepare the Base: In a saucepan over medium heat, combine the butter, milk, sugar, and cocoa powder. Heat gently, stirring constantly, until the butter has melted and the mixture is smooth. Do not boil.
  2. Add Powdered Milk: Remove the saucepan from heat and gradually whisk in the powdered milk until smooth and thick.
  3. Mix in Add-ins: Fold in the broken biscuits, puffed rice, and chopped pistachios until well distributed throughout the chocolate mixture.
  4. Shape and Chill: Transfer the mixture onto a piece of parchment paper. Shape it into a log, roll it tightly in the parchment paper, and twist the ends to secure. Refrigerate for 2-3 hours or until firm.
  5. Slice and Serve: Once set, remove the parchment paper and slice into thin rounds. Serve cold or at room temperature.

Notes

Ensure all ingredients are at room temperature for easier mixing and a smoother texture.

If the mixture seems too thick, add 1–2 tablespoons of milk. If it seems too soft, add a little extra powdered milk until it reaches a thick, spreadable consistency.

If you prefer a denser texture, reduce the amount of puffed rice and add more biscuits or nuts.

For a softer chocolate bar, add an extra tablespoon of butter to the mixture.

    • By sweet biscuits, I mean plain tea biscuits or tea cookies, such as Marie biscuits, Petit Beurre, Rich Tea biscuits, or Polish herbatniki. They are lightly sweet, crisp cookies that hold their shape well in the chocolate mixture. Avoid sandwich cookies or very soft cookies, as they can make the texture too soft. 😊🍫

  1. Be careful about heating sugar & butter together, it mustn’t boil or it will create a very hard mixture when it cools! Was still edible but difficult to slice. Dissolving granulated sugar can take a while so next time I will use caster sugar.

    • Thank you for sharing your experience! 😊 The mixture should be heated gently just until the sugar dissolves and everything is combined. It shouldn’t come to a boil, as that can make the finished block much firmer once cooled. Using caster sugar is a great tip since it dissolves more quickly than granulated sugar.
