Enjoy the simple pleasures of early summer with these Polish Dill Potatoes, a light and flavorful side dish that showcases the fresh taste of new potatoes garnished with dill and chives. Perfect as a side dish for a family dinner or a comforting meal on its own.


Ingredients

  • 2 pounds Young potatoes
  • handful Fresh dill
  • handful Fresh chives
  • 3 tablespoons Butter
  • Salt (to taste)

Instructions

  1. Prepare the Potatoes: If the potatoes are very young and the skin is thin, scrub them clean; if the skin peels off easily, you may wash them by hand. Transfer the cleaned potatoes to a pot.
  2. Cook the Potatoes: Add salt to the pot and cover the potatoes with cold water, making sure the water level is about 2 cm above the potatoes. Cook on low heat with the lid slightly ajar for about 25-30 minutes. Check occasionally with a fork to see if they are tender, being careful not to break them.
  3. Drain and Season: Once cooked, drain the potatoes and while still hot, drizzle with melted butter. Add the chopped dill and chives, and gently shake the pot to mix the herbs and butter evenly with the potatoes.
  4. Serve: Serve the potatoes warm, perfect as a side dish for grilled meats or fish, or enjoy them as a delightful vegetarian meal.

Notes

• Young, fresh potatoes are best for this recipe as they cook quickly and absorb the flavors of the herbs and butter beautifully.

• For a vegan option, substitute the butter with a vegan butter or a drizzle of good quality olive oil.

• These potatoes can also be cooled and used in salads or eaten cold as a refreshing snack.
