Units Scale
- 3 cups all-purpose flour (approximately 500 g)
- 3/4 cup unsalted butter (150 g)
- 3/4 cup granulated sugar (150 g)
- 1 cup honey (200 g)
- 1/2 cup sour cream (150 g)
- 4 egg yolks
- 2 teaspoons baking soda
- 1 teaspoon cocoa powder
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground black pepper (optional)
Instructions
- Prepare Spiced Honey Mixture: In a saucepan, combine butter, honey, cocoa powder, and spices. Heat over low heat until the butter is melted and the mixture is well combined. Let it cool slightly.
- Combine Sour Cream and Baking Soda: In a small bowl, mix the sour cream with baking soda and set aside.
- Mix Dough: In a large bowl, combine flour, egg yolks, and the sour cream mixture. Add the cooled spiced honey mixture and sugar. Mix until a dough forms. The dough will be sticky.
- Chill Dough: Cover the dough with plastic wrap and refrigerate for at least 10 hours or overnight.
- Preheat Oven: Preheat the oven to 340°F (170°C) and line baking sheets with parchment paper.
- Roll and Cut Dough: On a floured surface, roll out the dough to 1/4-inch thickness. Cut out shapes using cookie cutters. Place cookies on prepared baking sheets.
- Bake Cookies: Bake for 10-12 minutes, until the edges are lightly golden. Cool on a wire rack.
- Decorate: Once cooled, decorate the cookies as desired with icing or melted chocolate.
Notes
Ensure the spiced honey mixture is not too hot when mixing with the other ingredients to avoid scrambling the egg yolks.
For a festive touch, add a bit of food coloring to the icing used for decoration.
