Dough:

  • 3 Egg yolks (+ 1 egg white)
  • 1/3 cup (75g) White sugar
  • 3 2/4 cup (400g) All-purpose flour
  • 1/3 cup (80ml) Warm milk
  • 1/2 cup (100g) Unsalted butter (softened)

Crumble topping (Kruszonka):

  • 3/4 cup All-purpose flour
  • 1/2 cup Powdered white sugar
  • 1/4 cup Cold butter
  • Powdered sugar for dusting

Instructions

  1. Activate the Yeast: Crumble the yeast into a large cup, add sugar, flour, and warm milk. Mix well and leave to rise.
  2. Mix Ingredients: Beat the egg yolks with sugar and add to the sifted flour. Add the risen yeast starter and enough warm milk to get the right consistency. Mix slowly with a spoon or by hand.
  3. Knead the Dough: Once the ingredients are well combined, knead the dough for about 15 minutes until smooth and elastic. Add softened butter during the last 5 minutes of kneading. Cover with a cloth and leave to rise for about 1.5 hours.
  4. Shape the Dough: Punch down the dough, knead briefly, and place it into a greased 20 x 30 cm baking pan. Brush the surface with beaten egg white and sprinkle with fruits if using.
  5. Prepare Streusel Topping: Rub the cold butter into the flour and powdered sugar until crumbs form. Sprinkle evenly over the dough.
  6. Proof and Bake: Let the dough rise for about 20 minutes, then bake in a preheated oven at 350°F (180°C) for about 35 minutes until golden brown. Dust with powdered sugar or drizzle with glaze after cooling.
