Description

Traditional Polish botwinka is a vibrant and hearty young beet soup made with fresh beets, pork ribs, and vegetables. This nutritious soup is perfect for enjoying the flavors of spring and summer.


Ingredients

  • 1 bunch young beets (with roots, stems, and leaves)
  • 1 lb pork ribs (optional, for a vegetarian version use vegetable broth)
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups water (or vegetable broth)
  • 1/4 cup fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Heavy cream or sour cream (optional to make the soup creamy)
  • Hard-boiled eggs, for serving (optional)

Instructions

  1. Prepare Ingredients: Wash the beets thoroughly. Separate the roots, stems, and leaves. Dice the beet roots and stems, and chop the leaves. Set aside.
  2. Cook Pork Ribs: In a large pot, add the pork ribs and water (or vegetable broth). Bring to a boil, then reduce heat and simmer for 30 minutes, skimming off any foam that forms.
  3. Add Vegetables: Add the diced carrots, potatoes, onion, and garlic to the pot with the pork ribs. Continue to simmer for 10 minutes until the vegetables start to soften.
  4. Add Beets: Add the diced beet roots and stems to the pot. Simmer for another 15 minutes until the beets are tender.
  5. Add Beet Leaves: Stir in the chopped beet leaves and fresh dill. Cook for an additional 5 minutes until the leaves are wilted and tender.
  6. Season and Finish: Remove the pork ribs from the pot and cut the meat into bite-sized pieces. Return the meat to the pot. Stir in the lemon juice and season the soup with salt and pepper to taste.
  7. Serve: Ladle the soup into bowls and garnish with cream and sliced hard-boiled eggs, if desired. Serve hot with fresh dill sprinkled on top.

Notes

For a richer flavor, you can sauté the onion and garlic in a little oil before adding them to the soup.

If you prefer a thicker soup, you can mash some of the cooked potatoes and stir them back into the pot.

Adjust the amount of lemon juice according to your taste preference for acidity.
